I recently completed a 28 day reset challenge – no gluten, no dairy, no processed foods, no alcohol and no sugar 🙈. Yep you heard me, NO SUGAR!!! Argh I honestly didn’t really survive the whole 28 days. The 25 day challenge? Haha. There were so many times that I considered giving up (just like every day haha). Guys, on the first day a new range of M&M chocolate blocks were released!! GUYS!!! M&Ms are my jam. It’s safe to say that I was looking for healthy options for snacks that would fit into the diet’s criteria. And I just couldn’t do the whole 28 days without chocolate somewhere in my diet (it’s a work in progress 😂, don’t judge).
I stumbled across this recipe as it came up on my Facebook feed – The Ultimate Unbaked Brownies. I checked the ingredients list… woohoo I could have everything on the list. So when I needed to bring a snack to a church home group meeting, this fit the bill. Bonus because there are some people in our group who are gluten and dairy free, so this recipe would also be suitable for them.
Ingredients for Brownies:
- 2.5 cups of loosely packed pitted dates
- 1.5 cups walnuts
- 6 tablespoons of cacao or cocoa powder
- 1.5 teaspoons vanilla
- 2 tablespoons water
- 1/4 and 1/8 teaspoon salt
Ingredients for Icing:
- 1/4 cup cacao or cocoa powder
- 1/4 cup pure maple syrup
- 2 tablespoon vegetable or coconut oil
- 1/2 teaspoon pure vanilla extract
- Optional – Frozen Raspberries
Needless to say these brownies were a hit!! Everyone loved them. I added a raspberry on top of the icing for presentation, which wasn’t in the original recipe. But I found it added an extra natural sweetness and tangy-ness that cut through the richness of the slice. I also think that they need to be frozen to set properly, otherwise they are very sticky (bonus is frozen they last for 2 months!!). I have definitely added this recipe to my collection as an easy, quick, healthy AND allergy free option! Does it get any better than this?
